Ingredients
• 4 cutters
• 2 ripe tomatoes
• 150g of buffalo mozzarella or fresh mozzarella
• A bunch of fresh basil
• Extra virgin olive oil
• Salt and freshly ground black pepper (optional)
Method
1. Wash the tomatoes and basil. Cut the tomatoes into small cubes and finely chop the basil leaves.
2. Place the chopped tomatoes in a bowl and add the chopped basil. Season with a pinch of salt and freshly ground black pepper, if desired. Mix well and leave aside.
3. Cut the buffalo mozzarella or fresh mozzarella into thin slices.
4. Lightly moisten the freselle under running water, being careful not to overdo it to maintain the crunchiness. You can also quickly dip them in a bowl of water and then drain them.
5. Arrange the freselle on a plate or tray. Distribute the tomato and basil mixture evenly over the freselle. Add the mozzarella slices on top of the tomato and basil.
6. Decorate with some whole fresh basil leaves. Complete with a generous drizzle of extra virgin olive oil on each fresella.
7. Serve the freselle immediately to enjoy them at their best. If left too long, they can soften excessively.
